Whether they came from your garden or the store, fresh herbs can add that “something special” to your meals. Their flavor can help you tastefully reduce the salt, sugar, and even fat in recipes. And research also shows that herbs have antioxidants the may help protect against such diseases as cancer and cardiovascular disease.

Pick or purchase herbs close to when you plan to use them. They can be stored in the refrigerator for several days in an open plastic bag. Do not wash until you’re ready to use them, then pat dry with a clean towel. After chopping, fresh herbs should be added to recipes a minute or two before the recipe is done to maintain their flavor.
